I'm really trying to eat fish a couple of times a week. It's hard, because I'm picky and want fresh fish the day that I prepare it, but I'm working on it.
I got this intriguing recipe from a friend, and just had to try it today. Off to Greenwood Market (while it still exists) and I ended up buying more than I expected.
Most days don't call for such a feast, but today just did!
I decided I had to have caramelized shallots.
But what to put them on? I bought a Tall Grass baguette and made some crostini, bought some chevre, and roasted some grape tomatoes. Voila! You can't see the shallots on the bread, but believe me they're there.
And next up, the main course. Parmesan-puffed Tilapia.
I gathered the very simple ingredients together.
That's the best thing about fish. It requires so little, and cooks so quickly.
I'd forgotten how much I loved sauteed spinach. A little olive oil, some crushed red pepper and salt. I loved the fish recipe. I'm so earnestly grateful for fish like Tilapia that isn't fishy in taste.
As I've said before, everything tastes better with Sriracha. I will definitely make this again. The recipe link above is for a pound of fish. I just cut the proportions down for one fillet as follows:
Parmesan-puffed Tilapia for One
2 T mayonnaise
1/4 tsp Sriracha
1/3 cup Parmigiano-Reggiano
1 T sliced green onions
salt, sprinkled onto the fish
cooking spray
1 Tilapia fillet
1/4 tsp paprika
Preheat oven to 375.
Pat Tilapia fillet dry with a paper towel. Sprinkle with salt. Place fillet in a cooking dish that is sprayed with cooking spray.
Mix first four ingredients in a bowl and spread evenly onto fillet. Sprinkle with paprika.
Bake fillet for 15-20 minutes or until fish flakes easily with fork.
